The demand for 'free-from' foods, including lactose-free products, will continue to rise. The dairy industry is yet to embrace the trend and introduce a wider selection of healthy options. However, it is already visible how these products have changed and what consumers' preferences are. With food technology innovations such as Maxilact~®, dairy producers are able to capitalize on these trends and offer solutions that mitigate health and wellness concerns. People with food intolerance as well as those on specific diets no longer need to restrict themselves and can treat themselves to ice cream without making a sensory compromise. The manufacturers, on the other hand gain more technological flexibility to make ice cream a healthier indulgence for everyone.
