Taking Charge

Stan Pasterczyk is enjoying a year in the sun. That's not to say this unassuming yet outgoing New Jersey native is spending his days soaking up the rays at the Jersey shore. Rather, as chef/manager for Eurest Dining Services at Prudential Financial's office complex in Woodbridge, NJ, he is successfully meeting the challenge of increasing participation despite an 18% building population decline, all the while bringing food and labor costs under budget. And, since taking over the operation a year ago, he has succeeded in increasing check averages from $4.12 (net, 2003) to $4.45 (net, 2004).
