In this issue of FSTT we are featuring the first in a new series written by Dr Bill Whelan MIFST, a consultant microbiologist and member of the IFST Professional Food Microbiology Group's Education and Training Committee. 'Recent Research in Microbiology' is a short summary of some of the latest microbiological research findings of interest to the food industry and is prepared from independent peer-reviewed scientific literature.
