A clean-label potato fibre aimed at improving the quality and functionality of bakery, savoury and meat products has been introduced by Ingredion.Potex and Potex Crown potato fibres were designed to enhance the texture of processed meats and savoury products, and to boost the freshness of bakery items, the ingredients maker said.The insoluble fibres can absorb and retain up to 12 times their own weight, enabling them to increase the juiciness of fresh and processed meats or add moisture to baked goods, it added.Potex's "excellent" water and oil absorption can also reduce stickiness during production.
