Influence of production system on the quality of Gudali beef in Cameroon

InformationonthequalityofbeefproducedinCameroonisalmostnon-existent.Therefore,theaimofthisstudywastocontributetoprovidingscientificdataonthequalityofGudalibeefproducedunderdifferentproductionsystemsintheWesternHighlandsofCameroon.Threeproductionsystemswereselected:ranching,transhumanceandnomadism.TenGudalibullsofsimilarage(3-5years)wereslaughteredfromeachproductionsystemforanalysis.nbsp;SampleswerecollectedfromtheLongissimusdorsimuscleandusedtoevaluatesomephysical,chemicalandtechnologicalproperties.Resultsrevealedthatirrespectiveoftheproductionsystem,carcasspH24andpH48values(5.3-5.8)werewithintheacceptablerangefortablemeats.RanchedcarcassconsistentlyrecordedthelowestpHvaluesafter24hoursofstorage.Carcassfromranchingexpressedthelowestdriploss(0.77%),cook-out-loss(19.7%)andfreezingloss(9.4%),whilethehighestlosseswereregisteredincarcassfromnomadicsystem.Ranchedsamplesagainexpressedthehighestcrudelipid(0.97%)andcrudeprotein(24.4%)contentswhilethelowestvalueswerefoundinnomadsamples.TheseresultsindicatethatproductionsystemsignificantlyinfluencesbeefqualityinCameroonwithbeeffromtheranchingsystempresentingthebestquality.
