The activities and operations of Europe's third largest ice cream supplier, Roncandin, have been outlined. The company has manufacturing plants in Germany and France and distributed 140 million litres of ice cream in 2001. The company also has plans to expand its activities in Europe. Schoeller/Langnese continues to be one of the leading companies on the German ice cream market, and added various new flavours, packages and bars to their range during 2002. Also in Germany, the small-scale batch manufacture of ice cream by confectioners and in cafes has been described. This ice cream has a lower overrun than factory produced ice cream and currently represents about 20 per cent of total German ice cream output. Whipped ice cream processing and equipment are covered by a German patent. The first of two Japanese patents claims a method for manufacturing a well flavoured and stable ice cream, with homogenising pressures of 500-800 kg/cm used. The second covers an ice cream with good texture, flavour and heat shock properties.
