Differing dairy

In much of the world, a high proportion of milk is sold loose or as measured milk, where the consumer takes their container to be filled by a farmer or supplier. Much of this milk has been unprocessed or not processed to full pasteurisation standards, and is often boiled by the consumer before use. Loose milk is bought for economic reasons, although in some countries consumers believe it is higher quality because it is not heat-treated. Conversely, this milk carries a higher health risk, many governments take steps to promote pasteurisation.
