About 33 % of the total Swiss agricultural earnings are from the milk production which is therefore an important part of the Swiss agricultural industry. In our approach the origin and propagation of hazards from contamination with Listeria monocytogenes in Swiss Emmental cheese made from raw milk is modeled in a simple and transparent manner. Knowledge and experience of experts involved at all production levels and science areas was used to identify and assess the hazard potentials from the farm to the point of sales. The model shows the important cause-effect relationships of contamination. We propose our exposure assessment system as a contribution to a better understanding of preventive measures for the food safety. The approach allows to model cross-contamination between body and rind of hard cheese that are not modeled as a homogenous mass. Our risk assessment-results can be graphically represented by a so-called contamination profile. Our considerations refer to typical Swiss conditions but the modeling approach is adaptable to other parameters and types of problems.
