The amount of nitrite in preserved eggs,sausage and pickle in some supermarkets in Fuzhou were sampled and traced for three months.The amount of nitrite was determined by spectrophotometry according to standard reference method.The results showed nitrite was used in all test samples with legal amount.%对福州市部分超市销售的皮蛋、精装香肠、散装香肠、普通榨菜和儿童榨菜进行抽检及3个月的跟踪调查,通过分光光度法,测定食品中亚硝酸盐的含量。结果表明,不同食品中亚硝酸盐含量存在一定差异,但均符合国家标准。
