近红外光谱技术在大曲糖化力分析检测方面的应用

         

摘要

糖化力是衡量大曲糖化作用强弱的一个重要指标。传统的大曲糖化力的化学测定方法测定过程繁琐且时间较长,不能及时指导生产。采用近红外光谱技术与偏最小二乘法相结合的手段,建立了大曲糖化力的定标模型,在光谱预处理方法为一阶导数和多元散射校正、波数为4500cm-1~5800cm-1和6000cm-1~7800cm-1条件下获得大曲糖化力的最优预测模型。该模型交叉验证误差均方根(RMSECV)、决定系数(R2)分别为11.82mg(以C6H12O6计)/g·h和0.9411。随机选取验证集样品对模型预测能力进行验证,通过与传统分析方法检测结果进行比较,平均相对误差为2.14%,结果表明该模型具有较好的预测能力,可用于大曲理化指标糖化力的检测。%The saccharilying power is an important index to measure the sacchafifying strength of Daqu. In this study, the calibration models for measuring the sacchafifying strength of Daqu were built by near infrared spectroscopy technique combined with partial least squares (PLS) methods. The models were built and optimized by selecting different spectral pretreatment methods and wave number regions. The spectral pretreatment method was first derivative and multiplicative signal correction, the wave number region was 4500cm -1-5800cm-1 and 6000cm-1-7800 cm-1. The root-mean square error of cross-validation (RMSECV) and determination coefficient (R 2) were 11.82mg(C6H12O6)/g·h and 0.9322. By selecting randomly validation samples to verify the prediction ability of the model, the results were compared with the traditional analysis method. The average relative error was 2.14%. These results showed that the model could predict the sacchafifying strength of Daqu accurately and quickly, and it could be used o measure the sacchafifying strength of Daqu.
