吉林市市售啤酒中甲醛含量的测定与分析

         

摘要

Commercially available beers in Jilin were used as the research objects. The formaldehyde content in beer was measured by acetylac-etone spectrophotometry and the best measurement conditions were determined by orthogonal test on the basis of single factor test. The results showed that, the precision and the detection limit of this method were satisfactory, RSD was 1.02%, detection limit was 0.0285μg/mL, and re-covery rate was between 83.5%to 99.4%. Besides, the optimum measurement conditions were summed up as follows:water bathing tempera-ture was at 60℃, volume of acetylacetone was 5 mL, and water bathing time was 10 min. Formaldehyde content in beer samples was between 0.28 mg/L to 1.40 mg/L. Formaldehyde residues in beers of different brands, different producing places, different wort concentration, and differ-ent packaging varied but there was no significant difference among them.%以吉林市售啤酒为实验材料,采用乙酰丙酮分光光度法测定啤酒中甲醛含量,在单因素实验的基础上通过正交实验筛选出测定的最佳条件。结果表明,该方法的精密度与检出限均良好,RSD为1.02%,检出限为0.0285μg/mL,回收率在83.5%~99.4%之间,正交实验筛选出了乙酰丙酮分光光度法测甲醛的最佳条件:水浴温度为60℃、乙酰丙酮体积为5 mL、水浴时间为10 min。啤酒样品中甲醛含量均在0.28~1.40 mg/L之间。不同品牌、产地、原麦汁浓度和包装的啤酒甲醛残留量各不同,但无显著性差异。
