表面增强拉曼光谱在食源性致病菌检测中的应用

         

摘要

近年来,食源性致病菌污染引起的食源性疾病暴发事件频繁发生,它不但危及消费者健康和生命,而且对个人、单位和社会都造成不同程度的经济损失。如何快速灵敏地检测食源性致病菌已成为控制食品安全问题的关键。最常规最经典的检测方法如铺板培养法、生化检测等,操作过程较为繁琐,而且非常耗时,难以满足食源性疾病预防控制的需要。随着表面增强拉曼光谱技术的发展,已经建立了很多食源性致病菌检测新技术。我们对目前食源性致病菌的表面增强拉曼检测方法进行归纳和综述,旨在为致病菌检测的深入应用提供参考。%In recent years, the foodborne disease outbreaks caused by the pollution of foodborne pathogens occur frequently. It not only endanger the health and lives of consumers, but also cause different levels of economic loss⁃es of individuals, institutions and society. To detect foodborne pathogens fast and sensitively has become the key of controlling food safety. But conventional detection methods, such as the classic plank culture, biochemical testing, are more complicated and time-consuming and are difficult to meet the needs of food-borne disease prevention and control. With the development of surface-enhanced Raman technology, people have built a lot of new methods to detect food-borne pathogens. In this paper, the surface enhanced Raman detection methods of foodborne patho⁃gens were summarized and reviewed to provide a reference for the further application of pathogen detection.
