马铃薯去皮技术研究进展

摘要

对国内外马铃薯产业发展现状、目前去皮技术和装备存在的主要问题进行了综述，并对适应马铃薯食品开发需求的去皮技术发展趋势进行了展望。%The status of domestic and foreign potato industries and the main problems in the peeling tech-nology and equipment at present were reviewed, and the development tendency of the peeling technology that adapts to the development requirement of potato food was prospected.
