People in the Song Dynasty pursued elegant diet .Zhuoxian Cooking became increasingly prevalent .The growing diversity of cooking materials , professional division of cooking , the economic center was being southward and exchanging cooking skills and indifferent and rustic social diet concept are the main causes of the prevalence of Zhouxian Cooking .%宋人饮食追求高雅的情趣，斫鲜之会日益盛行。烹饪原料的日益多样、厨事专业分工的精细、经济中心南移、烹饪技艺南北交流和淡泊、质朴的社会饮食观是宋代斫鲜之会兴盛的主要原因。
