PROBLEM TO BE SOLVED: To develop a novel flavor induction wilt device capable of suitably conducting treatments in each process element of a wild process, which is an important process when fermented tea is manufactured, flexibly setting order and frequency of each process element and further conducting a high quality treatment in all tea periods, and a flavor induction wilt method of leaf using the device.SOLUTION: A device has a processing drum 1 capable of accommodating processed leaf A1 inside and conducting movement of oscillation or rotation with a certain angle, an air blowing device 2 for controlling processing environment in the processing drum 1, a heating device 3 for increasing temperature of the processed leaf A1 and a sensor 6 capable of measuring at least the temperature, weight of the processed leaf A1 which is processed in the processing drum 1, temperature and humidity in the processing drum.SELECTED DRAWING: Figure 1
