不同包装方式对金针菇冷藏保鲜效果的影响

         

摘要

以金针菇为试验原料,研究了复合保鲜剂对金针菇保鲜效果及不同包装方式对金针菇冷藏保鲜效果的影响。从5种保鲜剂中筛选出3种保鲜,通过正交试验进行优化复配。结果表明,柠檬酸0.20%、抗坏血酸0.15%和L-半胱氨酸0.5mg/Kg复合保鲜剂喷涂后的金针菇,真空包装在3℃贮藏条件下,保鲜效果好,与普通包装袋包装相比,可以延长保藏时间至24天。%With needle mushroom as test materials,studied the compound fresh-keeping agent for needle mushroom fresh-keeping effect and different packing method for needle mushroom refrigerated preservation effect.Selected three kinds of fresh from five kinds of fresh-keeping agent, through the orthogonal experiment to optimize distribution.The results showed that 0.20%citric acid,ascorbic acid 0.15%and 0.5mg/Kgof l-cysteine compound needle mushroom after the antistaling agent spraying,vacuum packing in 3℃ storage conditions,preservation effect is good,compared with the ordinary packing bag packaging,can prolong the preservation time to 24days.
