he ziziphus is rich in natural pigments. To obtain an extraction method of pigments from Ningxia Jujube, main factors affecting extraction were optimized using single factor, orthogonal tests and other experiment design. The result showed that the optimal conditions was as following: 0.2mol/L NaOH as extraction solvent, 30 minutes of extraction time, ,1: 20 of solid to liquid ratio, three times of extraction, based on which, maximum yield of 14. 71%% might be obtained.%红枣中含有丰富的天然色素.本文对宁夏红枣中的红色素进行提取,并采用单因素和正交试验等多种方法优化主要影响因素.结果表明:红枣红色素提取的最佳工艺条件为:以0.2 mol/L Na0H溶液为提取溶剂,提取时间30 min,料液比1∶20,提取次数3次.在此条件下,红枣红色素提取得率可达14.71％.
