The paper analyzed the fatty acids in lard and chicken oil by GC to obtain that the lard contained 17 kinds of fatty acids and the chicken oil contained 13 kinds of fatty acids. Different data processing methods were applied to recognize the lard and the chicken oil. The results showed that a ratio method of main fatty acids and a K-means cluster analysis for all fatty acids were feasible, however, the cluster analysis for the main fatty acids could result in the loss of fatty acid information and low clustering accuracy rate. This work provided reference data and a method for constructing an illegal cooking oil recognition method.%用气相色谱法分析猪油和鸡油脂肪酸信息,猪油含有17种脂肪酸,鸡油含有13种脂肪酸.采用不同的数据处理方法对猪油和鸡油进行识别分析.结果显示,主要脂肪酸比值法和针对全部脂肪酸信息进行K-均值聚类分析具有一定的可行性,而针对主要脂肪酸信息进行聚类分析会丢失一些脂肪酸信息,聚类正确率较低.本研究为探索建立识别地沟油分析方法提供参考数据和方法.
