为了提高荷斯坦奶牛后代的产肉性能和肉品质,将德系西门塔尔牛冻精冷配荷斯坦奶牛,选择杂交一代的公牛(试验组)和荷斯坦公牛(对照组)各20头,通过育肥和屠宰试验比较其生长发育指标、屠宰性状指标和肉品质指标.结果表明,与对照组相比,18月龄试验组体质量极显著提高7.74%,优质肉块质量牛柳+西冷、大米龙+小米龙分别极显著提高30.56%、27.07%,眼肌面积极显著提高21.09%,牛肉中粗蛋白、总氨基酸、谷氨酸、甘氨酸和天门冬氨酸的含量分别显著提高17.63%、8.19%、10.39%、19.19%和28.75%.综上,利用德系西门塔尔牛冻精冷配荷斯坦奶牛可以提高荷斯坦牛后代公牛的生长性能、产肉性能和肉品质.%In order to improve the meat performance and meat quality of Holstein cows,20 hybrid bulls (hybrid group) and 20 Holstein bulls (control group) were selected to determine meat production performance and meat quality of German Simmental × Holstein crossbred bulls.After feeding and slaughtering tests,the indexes of growth and development,carcass traits and meat quality were measured.The results showed that body mass of hybrid bulls aged 18 months were significantly increased by 7.74%.The high quality meat of tenderloin and striploin,outside flat and eyeround,and eye-muscle area of the hybrid group were significantly increased by 30.56%,27.07% and 21.09% than the control group respectively.The contents of crude protein,total amino acid,glutamate,glycine and aspartate of the hybrid group were significantly increased by 17.63%,8.19%,10.39%,19.19% and 28.75%,respectively.In summary,German Simmental × Holstein cow hybridization can improve the growth performance,meat performance and meat quality of crossbred bulls.
