T he orthogonal experiment is designed by using three factors and three levels for polysaccharides of mulberry leaves extraction .The optimal extractive technology condition is obtained through the experi-ment is :ratio of solid to liquid as 1 ︰ 9 ,extraction time as 90 mins ,extraction temperature at 90 ℃ . Through the experiment ,it is proved that this extraction technology has the extraction ratio of 8 .08% , which is higher than the extraction ratio got from 9 groups of orthogonal experiments by using three fac-tors and three levels .The determination of all these conditions laid the foundation for large-sale develop-ment and application of mulberry leaves .%设计了三因素三水平正交试验,对桑叶多糖的提取工艺进行了优化研究,确定出桑叶多糖提取的最佳工艺条件为:料液比1∶9,提取时间90 min ,提取温度90℃,通过实验验证该工艺条件提取桑叶多糖,多糖得率为8.08%,与三因素三水平正交试验所有实验组对照,大于正交试验中9个组合提取率,这些条件的确定为桑叶的大规模开发和应用奠定了基础。
