鲭科鱼类活性肽的酶法制备及其生理功能研究进展

         

摘要

鲭科鱼类作为重要的海洋经济种类,资源丰富,是食源性蛋白的重要来源,但目前对其综合利用却徘徊在较低水平。酶解鲭科鱼类蛋白以制备具有抗氧化、降血压、免疫、抗菌等作用的活性肽是将鲭科鱼类进行高附加值利用的一条有效途径。就酶解鲭类蛋白质制备活性肽的工艺条件、活性肽常见的分离纯化和序列鉴定方法、活性肽的主要生理功能等方面的研究进展进行综述,讨论了酶法制备活性肽的研究中所面临的问题和相应对策,并对其应用前景予以展望。%Scombridae fishes , as economically important marine species , are abundant sources of food proteins .Their comprehensive utilization rate , however , is still at a low level .Bioactive peptides with various biological activities such as antioxidation , anti-hyper-tension, immunization and antibacterial prepared by enzymatic hydrolysis is an efficient way for higher added -value of Scombridae fi-shes.This paper reviewed the conditions of enzymatic hydrolysis of Scombridae proteins , the approaches for purification and identifica-tion as well as the primary physiological functions of Scombridae peptides .Furthermore, the problems and corresponding countermeas-ures were discussed and potential applications of bioactive peptides from hydrolysates of Scombridae fishes were summarized .
