Chitosan was used as carrier and glutaraldehyde as a cross-linking agent for the immobilization of papain. They were applied in the preparation of hydrolysates from proteins of Ruditapes philippinarum. Some parameters such as pH, the amount of immobilized papain, time and temperature were optimized through orthogonal test. The results showed that optimal conditions of enzymolysis were 1.8% of immobilized papain, reaction time of 9 h and temperature 60 ℃ at pH 6.0. In addition, peptide recovery of the R. philippinarum was 60. 4 mg.%利用壳聚糖为载体、戊二醛为交联剂固定化的木瓜蛋白酶,水解菲律宾蛤仔.通过正交试验对pH值、酶用量、酶解时间、温度等参数进行了优化.结果表明:在pH 6.0条件下,酶解菲律宾蛤仔的最佳工艺条件为固定化木瓜蛋白酶酶加量(E/S)1.8%、酶解时间9 h以及温度60℃,所得菲律宾蛤仔肽含量为60.4 mg.
