Polyphenols were extracted from longan seeds by using solvent extraction , ultrasound-assisted extraction and microwave-assisted extraction respectively. The content of polyphenols was detemined by the Folin-Ciocalteus method, and the extracted rates were calculated. The antioxidant activity of extracts were evaluated by total reducing power, superoxide anion radical and DPPH free radical scavenging activities. The extracted rates of polyphenol were (13.60 ±0.46) %, (9.85 ±0.76) %, (8.65 ±0.43) %, (12.04 ±1.69) %respectively. It was revealed that there were significant differences among these methods. The most radical scavenging activity against superoxide anion radical and DPPH free radical was microwave-assisted extract. In conclusion, the best result was obtained from microwave-assisted extraction.
