具有优良拮抗沙门氏菌能力的乳酸杆菌的研究

         

摘要

Salmonella is one of the common foodborne pathogenic bacteria. Some studies had reported that Lac-tobacillus could effectively inhibit some pathogenic bacteria,however,the reports of Lactobacillus strains with antagonistic activity against Salmonella were not common. A Lactobacillus strain with good antagonistic activity against Salmonella was selected,and the characteristics of antibacterial substance was revealed. Results showed that the No.3 L. plantarum had a stronger inhibition to Salmonella. The antibacterial substances contained bacte-riocins,organic acid and hydrogen peroxide. In addition,the antibacterial substances of Lactobacillus also had strong thermal stability.%沙门氏菌是常见的食源性致病菌之一,有研究报道乳酸杆菌可以有效的抑制某些致病菌,然而对于能够拮抗沙门氏菌的乳酸杆菌的报道并不常见。筛选出了一株具有优良拮抗沙门氏菌能力的乳酸杆菌,并对其抑菌物质的特性进行研究;结果表明3号植物乳杆菌(L. plantarum)对沙门氏菌具有较强的抑制能力,其抑菌物质中包含了细菌素、有机酸和过氧化氢。此外,乳酸杆菌的抑菌物质也具有较强的热稳定性。
