花青素是水溶性天然色素,具有重要的营养价值和药用价值,在食品、化妆品、医药等行业有着巨大的潜力.综述花青素的溶剂浸提法和辅助提取法等提取方法,膜分离法、柱层析法、高效液相色谱法和高速逆流色谱法等纯化方法,总结各种方法的优势和不足,为花青素的产业化开发和深入研究提供参考.%Anthocyanins which are water-soluble natural colorants and possess significant nutritional and phar-maceutical values, have great potential in food, cosmetics and medicine industries. The extraction methods, such as solvent extraction and the assisted extraction, and the purification methods, such as membrane separa-tion, column chromatograph, high performance liquid chromatograph and high speed counter current chro-matograph were reviewed. The advantages and disadvantages of various methods were summarized. The paper provided a reference for industrial development and further study of anthocyanins.
