无糖决明子保健茶的研制

     

摘要

以决明子为主要原料,三氯蔗糖和甜菊糖苷为甜味剂进行复配开发无糖决明子保健茶.采用单因素试验对决明子浸提液的制备进行研究,通过正交试验研究无糖决明子保健茶饮料的制作工艺.最终确定决明子浸提液的最佳浸提工艺为:浸提比例1:40(g/mL),温度80℃,浸提时间1 h,浸提次数为3次;决明子保健茶饮料的最佳配比:决明子浸提液80 mL,三氯蔗糖稀释液30 mL(0.006%),甜菊糖苷稀释液15 mL(0.003%).%With Semen cassiae as exsperimental material,chlorosucrose and stevia glycosides as sweeteners for distribution,developed the sugar-free health tea of Semen cassiae. Semen cassiae extract preparation were stud-ied by single factor test. Through orthogonal experiment,the optimum conditions were obtained: Semen cassiae extraction process: Semen cassiae and water extraction ratio of 1:40(g/mL),temperature 80 ℃,extraction time 1 h, extraction times of 3 times. the health tea: Seman Cassiae extract 80 mL, the sucralose diluent 30 mL(0.006 %), the stevioside dilution 15 mL(0.003 %).
