To discuss the preservation effects of chitosan film-coating on winter jujube produced of Shanghai, the dongzao jujube were packed into PE bags (0.04mm PE film in thickness) after disposing of chitosan film-coating to study the effects of storage quality. The results showed that the dosages of 1.5% chitosan film-coating could restrain the decline of ascorbic acid, the reducing sugar, the contects of chlorophyll,firmness and water content of the dongzao jujube. All of the targets were hinger than the CK, after stored for 80 days.Meanwhile the dosages of 1.5 % chitosan film-coating could effectively suppress the occurrence of jujube flesh browning degree, reduce rot fruit rate,delayed the senescence of jujube fruits.%采用壳聚糖溶液处理沪产冬枣,结合PE保鲜袋包装贮藏,研究壳聚糖涂膜处理对沪产冬枣贮藏品质的影响.结果表明,采用1.5%壳聚糖涂膜处理沪产冬枣,到贮藏末期80 d时,Vc含量、叶绿素含量、还原糖含量、水分含量及果实硬度均明显高于对照,并可有效抑制枣果果内褐变的发生,降低烂果率,延缓冬枣果实的衰老.
