为比较不同品种啤酒花挥发性成分的差异,对青岛大花、纳盖特、马格努门、萨兹4种啤酒花进行净油的制备,得到4种净油,利用气相色谱-质谱联用方法(GC-MS)分析4种净油的挥发性成分,并应用于卷烟对比应用效果.结果显示:①从这4种啤酒花净油中共鉴定出38种成分,共有成分为24种,其中以蛇麻酮为代表的 β 酸相对含量最高;4种啤酒花净油都带有明显的特征香气,因成分种类和含量不同而在其他香韵和丰富性上有一定差异;②将4个不同品种的啤酒花净油应用于卷烟中,得到了良好的应用效果,它们在赋予卷烟香气韵调、丰富性和回味上存在一定的差异.%In order to understand the differences of volatile components in different varieties of hops, four absolute oils of hops including Tsingdao Flower, Nugget, Magnum and Saaz were prepared, the volatile components in them were identified by gas chromatography - mass spectrometry (GC - MS), and their effects in cigarettes were compared.The results showed that:① thirty - eight volatile components were identified with twenty - four components in total, in which, the main components were beta acids represented by lupulone. These four kinds of hops had obvious characteristic flavor. There were certain differences between flavor nuances and richness resulting from different components within and their amounts. ② When these four hops absolute oils were applied in cigarettes, the good application effects were obtained, however, the differences of flavor nuances, richness and aftertaste also existed .
