以我国菠萝主栽品种‘巴厘’为试材,分析不同月份采收的菠萝果实Vc、可滴定酸、可溶性糖和可溶性固形物的变化,结果表明:不同月份成熟的菠萝果实Vc含量有差异,1~12月呈先降低后升高的趋势,11~4月较高,5~9月较低;可滴定酸含量与Vc含量变化趋势一致,11~3月较高,4~9月较低;不同月份成熟菠萝果实可溶性糖含量变化无明显规律,1、5、6、7、12月较高,其他月份较低;可溶性固形物含量表现出与Vc、可滴定酸含量变化相反的趋势,5~7月较高,其次为9、11,2、3月,可溶性固形物含量最低;各月份果实糖酸比情况表现为7月>6月>5月>9月>4月>12月>8月>1月>3月>2月>11月。从保证果实风味品质出发,宜选择在12~2月定植为佳。%The contents of vitamin C, titratable acid, soluble sugar, and soluble solid were analyzed among the Yellow Mauritius pineapple harvested in different months. The ultimate aim was to provide exceptional pineapple fruit for consumers. The results showed that the contents of Vc differed from January to December, which displayed a high-low-high model. The Vc contents of pineapple harvested from November to April were higher than those harvested from May to September. The variation of titratable acid content was similar to Vc content. It showed a higher level from November to March than those from April to September. There was no significant regularity in soluble sugar contents of pineapple harvested in different months. They were higher in January, May, June, July, and December than those in other months. The contents of soluble solid in different months showed the reverse change trend compared with Vc and titratable acid. They were highest in May, June, and July, while lowest in February and March. The sugar acid ratio of pineapple in different months from high to low was: July, June, May, September, April, December, August, January, March, February, and November. Considering the flavor quality of fruit, the pineapple seedling should be planted in the period from December to February.
