茎瘤芥采收期营养和安全品质变化规律研究

             

摘要

在茎瘤芥采收期,每3 d采收1次,分析测定瘤茎Vc、可溶性糖、游离氨基酸、硝酸盐及亚硝酸盐含量,结果表明,可溶性糖和Vc含量在采收期均呈先降后升的规律,面游离氨基酸、硝酸盐则一直呈下降趋势,亚硝酸盐变化较复杂;考虑产量和品质因素,建议茎瘤芥在雨水节6 d(现蕾前2 d)后收获.%By harvesting tumoroua stem mustard every 3 days in harvesting time , the content of Vc , soluble sugar,free amino acids , nitrate,nitrite were analyzed and mensurated. The results showed that the content of Ve and soluble sugar has the law of going up first and then down, free amino acids and nitrate descend all the while , and with a complex variety of nitrite. According to yield and quality factor, it was suggested tumoroua stem mustard should be harvested in 6 days after Rainwater Day (2 days before budding stage) .
