深圳市街头摊点摊主食品安全知识和卫生行为调查

         

摘要

Objectives To understand the health behavior and the food safety knowledge of street stalls' owners in Shenzhen City and to provide scientific basis for our government's stronger supervision. Methods By using random sampling method, we investigated the health behavior and the food safety knowledge of street stalls' owners with a questionnaire. Epidata 3.01 was used for founding the data base and doubling record, and SAS 8.2 statistic software was used for the analysis. Results The total awareness of food safety knowledge was not high and only 61.0% of the owners had received training in the last year. Based on the logistic regression analysis, minority, flow stalls,without receiving training was the main reasons which leaded to Iow awareness. Comparing the untrained and trained owners, the health permit holding rate was 46.0% and 75.68% (x2 = 13. 549 2, P=0. 001 1) respectively,and the rate of poor environment was 28.0% and 12.61% ( x2 =6. 783 7, P=0. 033 6) respectively. Conclusions The total awareness of food safety knowledge for all owners was not high. The health department should strengthen effort of supervision and the knowledges training.%目的 了解深圳市街头摊点摊主食品安全知识知晓率和卫生行为,为政府进一步加强对街头摊点的监管提供依据.方法 采用随机抽样的方法,以问卷方式对182个街头摊点的摊主食品安全知识知晓情况和卫生行为进行调查,资料经Epidata 3.01建库并进行双录入核查,用SAS 8.2统计软件进行统计分析.结果 摊主的食品安全知识总体知晓率不高,有61.0%的人近1年接受过培训,经Logistic回归分析发现,少数民族、摊位不固定、没有经过培训是导致知晓率低的主要原因;未接受过培训和接受过培训的人相比,卫生许可证持有率(χ2=13.549 2,P=0.001 1)分别为46.0%和75.68%,摊位周围环境较差分别占28.0%和12.61%( χ2=6.783 7,P=0.033 6).结论 深圳市街头摊点摊主食品安全知识总体知晓率不高,卫生部门应加大监管力度,加强卫生知识的培训.
