The Jiashi melon seeds oil was extracted by Soxhlet extraction method with different solvents, and the fatty acids composition of the oil was analyzed by gas chromatography - mass spectrometry( GC -MS ). In addition, the physicochemical properties of Jiashi melon seeds oil were also determined. The results showed that the optimal extraction solvent was petroleum ether, and its oil yields was 48. 38% ,the total unsaturated fatty acids of the oil was 79. 73% with linoleic acid being the dominant fatty acid ( 61. 74% ). The relative density (df ) , refractive index (ri% ) , acid value, saponification value, iodine value and peroxide value of the Jiashi melon seeds oil were 0.905 8, 1.472 8,3.39 mgKOH/g, 169 mgK0H/g,115. 85 gI/100 g and 5.4 mmol/kg.%采用不同溶剂对伽师瓜籽油进行提取,用气相色谱-质谱技术对所得伽师瓜籽油脂肪酸组成进行分析,同时测定了伽师瓜籽油常规理化性质.结果显示,伽师瓜籽油的最佳提取溶剂为石油醚,出油率为48.38%,其油不饱和脂肪酸含量为79.73%,亚油酸含量高达61.74%.伽师瓜籽油相对密度(d204)为0.905 8,折光指数(n20D)为1.472 8,酸值(KOH)为3.39 mg/g,皂化值(KOH)为169 mg/g,碘值(Ⅰ)为115.85 g/100 g,过氧化值为5.4 mmol/kg.
