超声波技术在油脂工业中的应用和研究进展

摘要

The characteristics and mechanism of ultrasonic wave were described and the application and research status of ultrasonic wave in oil and fat industry, including the pretreatment of oil plants, extraction of oils and fats, refining and modification of oils, crystallization and analysis of oils were summarized. The advantage, items needing to be improved and application prospect of ultrasonic wave in oil and fat industry were discussed.%概述了超声波特性及其作用原理,并针对超声波技术在油脂工业中的应用(包括油料预处理、动植物油脂制取、油脂精炼、油脂改性、油脂结晶和油脂分析检测等方面)和研究进展进行综述,阐述该技术的优势及尚待改进之处,以及在油脂工业中的应用前景.
