The physicochemical properties of chitosan, and its application in food industry, as well as the existing problems were analyzed in this paper. In the end, the development prospects of chitosan was predicted.%院本文以壳聚糖为研究对象,系统分析了壳聚糖的理化性质、在食品工业上的应用以及存在的问题,进一步展望了壳聚糖的发展前景。
