血红铆钉菇醇溶性色素的提取和稳定性研究

         

摘要

Chroogomphis rutilus ( Schaeff. : Fr. ) is a delicious mushroom with bright color which might be a natural pigment resources. Four extracting methods, ultrasonic wave, reflux, water bath and soxhlet extraction were compared to extract the alcohol - soluble pigment from C. rutilus. The optimal method was ultrasonic extraction. The maximum absorption wavelength of alcohol - soluble pigment was at 540nm detected by UV - visible spectrophotometry. At the same time, the solubility and stability of pigment to light, heat, pH, oxidant, reducing agent, metal ions, and common food additives were investigated. The results showed that the pigment was easy to dissolve in medium polar solvent, stable in light, reducing agent, most metal ions and food additives, but unstable for high temperature and oxidant. The stability characteristic of the pigment should be considered in practice.%血红铆钉菇味道鲜美,色泽鲜艳,可以作为天然色素开发的有利资源.本实验比较了超声、回流、水浴和索氏四种方法从血红铆钉菇中提取醇溶性色素,经紫外-可见光度法检测结果表明,该真菌醇溶性色素的最大吸收波长为540nm,索氏提取法对该色素提取率最高,其次为超声和水浴法,回流法提取的色素含量最低,超声法简单易操作,建议采用此方法提取该色素.色素的稳定性与实际生产密切相关,本研究对血红铆钉菇子实体的醇溶性色素的溶解性,及对光、热、不同pH、氧化剂、还原剂、常见金属离子及常用食品添加剂等的稳定性进行了研究.实验结果表明,该色素脂溶性好,对光、还原剂、多数金属离子和食品添加剂稳定,但是对热和氧化剂较敏感,在使用时需注意.
