高含量水溶辣椒精的方法研究

         

摘要

试验采用了不同试剂乳化配比的方法,研究了高含量水溶性辣椒精的工艺条件.以100g/kg纯度的辣椒精为原料,研究乳化剂吐温-80加量、丙二醇加量、软化水加量、加热温度等单因素对其水溶性、辣度和流动性的影响,经正交试验法确定其最佳乳化工艺条件.结果表明,添加0.3g/g的吐温,0.3g/g的丙二醇,2g/g的软化水,在75C条件下,边加热边搅拌30min,静置,即可制得水溶性较好的辣椒精.同时,选用该乳化工艺,具有生产成本较低、无污染、易于操作、生产安全性高等优点.该工艺用于工业生产中制备高含量水溶性辣椒精是可行的.%High content of water- soluble capsicum processing was studied by testing different emulsify reagents. The effects of Tween - 80 concentration, the amount of Propylene glycol, the heating temperature on water - soluble capsicum were studied using a raw material containing 100g/kg capsicum. The optimal parameters were determined via the orthogonal experiments at 0. 5g/g Tween - 80, 0. 5g/g Propylene glycol, heating and stirring at 75℃ for 30min, followed by precipitation. Meanwhile, the use of the emulsifying process has the advantages of low production costs, pollution - free, easy operating and safe production. The process is feasible using in industrialized production.
