三种具有相同结构多肽的抗氧化功能构效关系的研究

摘要

本课题基础研究结果表明,瑞士乳杆菌在分解牛奶酪蛋白时可以产生三种具有相同氨基酸结构的多肽DELQ、DELQDKIH和DELQDKIHPF.为了探索这三种多肽是瑞士乳杆菌分解牛奶酪蛋白产生的中间产物还是最终功能性物质,采用DPPH法和ABTS法测定了这三种多肽的体外清除自由基能力和总抗氧化能力,在此基础上探讨了抗氧化肽的构效关系.实验结果表明,DELQDKIHPF的抗氧化活性最强,其次是DELQDKIH,DELQ,分析这三种多肽多数是瑞士乳杆菌分解酪蛋白时产生的中间产物,多肽的抗氧化活性与氨基酸的种类、数量和排列顺序等均相关,为今后抗氧化肽保健品、化妆品以及药物的开发奠定了基础.%The basic research of this study shows that Lactobacillus helveticus can produce three peptides DELQ,DELQDKIH and DELQDKIHPF with the same amino acid structure during the decomposition of milk casein.To explore these three peptides were whether intermediate products or final functional substances of hydrolysis,the DPPH method and the ABTS method were used to determine the ability of free radicals and total antioxidant capacity.On this basis,the structure-activity relationship of antioxidant peptides was discussed.The results showed that DELQDKIHPF had the strongest antioxidant activity,followed by DELQDKIH and DELQ.By analysis,these three peptides were mostly intermediate products of hydrolysis,and the antioxidant activity ofpeptides was related to type,quantity and arrangement of amino acids,which laid a foundation for the future development of antioxidant health care products,cosmetics and drugs.
