In most cases,air is needed in biological fermentation process.Air inlet fermentor will gen-erate much foam,which has great effects on biological fermentation.Analyze the cause of foam for-mation in biological fermentation and review the main ways of foam breaking.The independent varia-ble is the concentration of foaming agent and ventilatory capacity,and the corresponding variable is rotation of mechanical foam breaker.The result is that when increasing the ventilatory capacity,the need of rotation is lower,which is very important for saving energy.As a result,mechanical foam breaker can break foam independently.%生物发酵过程大多伴随着气体的通入,这会使发酵体系产生许多泡沫而难以消除。分析了生物发酵过程泡沫产生的原因,并对目前消泡手段进行了归纳总结。实验通过改变起泡剂浓度和通气量来寻找机械消泡器消除泡沫所需的转速。结果得出,在通气量增加的情况下,消泡器所需的临界转速呈下降趋势,对降低能耗有重要意义;实验结果表明,机械消泡器完全有能力在没有化学消泡剂的情况下阻止泡沫的溢出,达到消泡的目的。
