一种燕麦乳酸菌发酵饮料的研究

         

摘要

采用中温α-淀粉酶、糖化酶对燕麦进行双酶水解,所得的糖化液配以脱脂奶粉,进行杀菌,冷却后再以保加利亚乳杆菌和嗜热链球菌为发酵剂进行接种发酵,制备出一种含有活性成分且具有保健功能的生物乳饮料,其活菌数高达1.989×109 cfu/ml,酸度97°T,β-葡聚糖含量为0.46 mg/ml.%The oat was hydrolyzed by medium-temperature oramylase and glucoamylase. The saccharification liquid together with the skim milk powder was sterilized, cooled and then fermented by bulgaria lactobacillus and streptococcus thermophilus as fermentation agents to prepare a kind of biolacto drink contained active ingredients with health function, of which the viable number of up to 1. 989× 109 cfu/ml, acidity 97°T, and β-glucan content of 0. 46 mg/ml.
