特种营养米研究进展

     

摘要

大米饭是我国居民最重要的主食,但普通大米加工过程营养流失严重.通过生物转化、富集或复配等途径生产的特种营养米,其食用方式与普通大米相似,但营养价值有所提高.阐述了几种特种营养米的加工技术和产品特征,通过研发特种营养米,实施主食营养化,可改善居民健康水平,实现稻米资源高效利用,这也是稻米深加工的主要发展方向之一.%Steamed rice is the most important staple food in China,but rice nutrients loss is a serious problem in ordinary rice processing.Special nutrition rice is made by biotransformation,enrichment or compound technology,which has the similar edible way as ordinary rice but more nutritional value.We described the processing technology and product feature of some special nu-trition rice,aimed at improving residents health level and increasing rice resource utilization through optimizing staple food nu-trition by special nutrition rice processing,which was an important development direction of rice further processing.
