发酵豆粕对‘申农I号’猪生长性能及肉品质的影响

         

摘要

为了研究发酵豆粕饲料对‘申农 I 号’猪的生长性能和肉品质的影响,将90头‘申农 I 号’猪分成对照组和添加发酵豆粕的试验组,相同条件下饲喂85 d 后,对猪的生长性状、屠宰性状、氨基酸及氨基酸评分进行测定分析。结果表明:试验组平均末重和日增重显著高于对照组;屠宰前重和胴体斜长显著高于对照组,皮厚显著低于对照组,屠宰率、平均背膘厚、6—7肋骨膘厚、眼肌面积和瘦肉率均高于对照组;滴水损失、嫩度、肌内脂肪和肉色均显著高于对照组;除了脯氨酸和组氨酸,试验组的其他氨基酸含量均显著高于对照组。试验表明:日粮中添加发酵豆粕,可提高‘申农 I 号’猪生长速度,改善其肉品质。%In order to study the effects of fermented soybean meal on the growth performance and meat qual-ity of ‘Shennong I’pigs,90 ‘Shennong I’pigs were divided into two groups,including control group and adding fermented soybean meal(FSBM)group.After feeding for 85 days under the same condition,the growth traits, slaughter traits,amino acids and amino acid score of the pigs were determined.The results showed that the aver-age final weight and daily gain of FSBMgroup were significantly higher than those of control group(P <0.05). The pre slaughter weight and carcass length of FSBMgroup were significantly higher than those of control group (P <0.05).The skin thickness of FSBM group was significantly less than that of control group.The slaughter rate,average backfat thickness,6—7 rib fat thickness,eye muscle area and lean meat percentage of FSBMgroup were higher than those of control group.The drip loss,tenderness,intramuscular fat and meat color of FSBM group were extremely significantly higher than those of control group(P <0.01).The other amino acid content of FSBMgroup were significantly higher than those of control group(P <0.05)except proline and histidine.The fer-mented soybean meal adding in diet could improve the growth rate and meat quality of ‘Shennong I’pigs.
