摘要

Oenococcus oeni strains were isolated from Nero di Troia wines undergoing spontaneous malolactic fermentation (MLF). Identification of O. oeni strains was performed by modified FT80 media and by polymerase chain reaction (PCR) experiment using O. oeni strain-specific primers. Strains were further grouped using PFGE (Pulsed Field Gel Electrophoresis) analysis.
