Traditional fermentations of cereals with natural occurred microorganisms are widely practiced in Asia.The fermentation plays an important role in providing wholesome foods with attractive flavour and texture.Traditional fermented rice foods in China include mainly fermented rice noodles (sour mifen),rice bread,rice cakes,fermented rice porridge (laozao),fermented rice milk,rice wine,rice vinegar,and red mold rice (Monascus) etc.Natural fermentations are complicated biochemicalsystems.
