Sesames are rich in nutrients,such as sesamin,sesamol,sesaminol,sesamolin,Vitamin E.,and rich in sesame proteins.In traditional process of making aromatic sesame oil,cooking and pressing at higher temperature are commonly used for the purpose of getting full-bodied sesame aroma; but at higher temperature condition,it results in great losses of nutritional function due to denaturation of sesame proteins and losses of activated substances in sesame oil.This thesis researches the process of extracting sesame oil under lower temperature condition.Predicating on oil yield,optimize process technological parameters under the lower temperature condition; and at optimized process technological parameters,study quality changes of sesame products.This research develops new process for taking fully advantages of sesames.
