摘要

In this study, a protocol is set up to investigate microbiological viability of two edible coating solutions to be applied in liquid smoked sea bass fillets. Alginate and chitosan are biopolymers which can form invisible films. After coating preparation, alginate solution shows high microbial counts. However, chitosan solution maintains good hygienic quality.
