Skeletal muscle metabolism is a very complex parameter that has a major influence on meat quality because it influences both the structure and the biochemical characteristics of the muscle. It is closely linked to energy intake and use and thus to some environmental factors that can be more or less controlled. However, muscle metabolism has a strong genetic determinism that is still poorly understood because of its complexity in both the number of genes involved and the close interaction between them.
