The objectives of this research were to investigate the effectiveness of immobilized enzyme mixtures on the liquefaction and saccharification of rice starch for the production of high glucose syrup from broken rice kernels, to investigate experimental variables to allow for a process that can be conducted at uninterrupted operating parameters over the duration of the process, to reduce overall processing times, and to develop and test an overall kinetic model for the enzymatic degradation of rice starch. As of this time, difficulties encountered during the immobilization process have impeded the ability to accurately quantify the amount of enzyme bound to the support. As a result, experimentation has been delayed until the problem can been resolved. The quantity of bound enzyme is necessary for the determination of enzyme activity, enzyme half-life and the development of the mixed system kinetic model. A full and complete paper will be available upon request after the process has been completed.
