Dietary intake of omega-3 (omega3) fatty acids, specifically eicosapentaeoic (EPA) and docosahexaenoic (DHA) acids has gained in popularity in recent years. The development of a mass spectral method for the analysis of free and bound EPA and DHA at physiological levels is a challenge based on the high endogenous background and variability between human subjects. This variation can be based on dietary intake as well as individual metabolism. In order to determine accurate concentrations of EPA and DHA in human plasma following a clinical trial, a surrogate matrix and digestion procedure was required; where a fully validated method was developed and employed.
