4-Methylimidazole (4-MEI) is a concentrated by-product in Class III and IV Caramel Colorings. Due to safety concern, California OEHHA. listed a "No Significant Risk Level" of 29 μg per day[4]. Natural brewing process also produces 4-MEI, but no more than 10 ppb[5].
