Australia possesses a diverse range of wild rice species. These species may be a source of new alleles or cultivars. Starch functionality is influenced by endosperm ultra structure and starch granule morphology (Singh and Kaur, 2004; Londo et al, 2006). A comparative scanning electron microscope study of Australian and cultivated rice species was undertaken in order to investigate the endosperm and starch granule morphology of wild species.
